Penn State Bakery, Creamery Team Up For Dozen New Ice Cream Cookie Sandwiches

The Penn State Bakery and Berkey Creamery are teaming up to produce 12 new ice cream cookie sandwiches that will debut this summer, according to a release.

Jim Brown, creamery sales and marketing manager, and Heather Luse, executive pastry chef for the bakery, brainstormed ideas for the ice cream cookie sandwiches which resulted in 12 new ice cream cookies approved by both the creamery and bakery staff.

New sandwiches include pairings of Birthday Bash ice cream and rainbow sprinkle cookies, Pumpkin Pie ice cream and gingersnap cookies, and Peppermint Stick ice cream with white chocolate chunk cookies.

“With all of the pairings possible, the process wasn’t easy, but it sure was fun,” Brown said. “After all, there was no way we could lose when bringing together our delicious ice cream with the bakery’s fantastic cookies. And uniting two Penn State food icons — the creamery and the bakery — was a perfect match, too.”

Brown said the Creamery found ice cream cookie sandwiches to be particularly popular throughout the pandemic. Now, they’re focused on keeping them available moving forward.

“The traditional ice cream cookie sandwiches always have been popular in our retail store,” Brown said. “But when the pandemic hit, and we were limited to serving prepackaged items, they really took off. That’s when we decided to work with the Penn State Bakery to develop some new twists to this creamery favorite.”

The new suite of ice cream cookie sandwiches will be available online, in-store, and around campus.
